From the Bartender's Notebook: Stay-Cation Spiced Pineapple-Cider Fizz

This fizzy cocktail is a Twinette original recipe. It pulls sweeter notes from cider, pureed pineapple, and a touch of maple syrup - the warming St Elizabeth’s Allspice Dram plays up to both the tropical tiki-esque and apple pie notes.

St Elizabeth’s Dram, also referred to as a Pimento Dram is lovely to have around the bar- a liquor with notes of  clove, cinnamon, nutmeg and pepper, a little goes a long way. It also makes an excellent addition to mulled wine in place of the spices!

It’s a perfect end of the day unwinding.

Tip: Prep the garnishes first!

Slice the garnishes with a sharp knife to get them thin as possible- the apple slice is a bit translucent over the lime round. With cocktails the first sip is indeed the most important and making it beautiful and inviting awakens the senses!

This cocktail is unusual in that it calls for a blending of ingredients, followed by a shake- the creamyness achieved by doing so is so worth it!

This cocktail would be the perfect cap to a brisk afternoon  hike!
